What is E. coli?
Escherichia coli (or E. coli) is a bacterium naturally present in the intestinal flora of humans and warm-blooded animals. The vast majority of strains are completely harmless, and are even part of normal digestive balance.
The food safety risk comes from a specific subgroup: pathogenic strains, notably Shiga toxin-producing E. coli (STEC), of which strain O157:H7 is the best known. It is these specific strains, and not E. coli in general, that are subject to enhanced monitoring in food processing.
Why does it matter in food processing?
STEC infection can cause severe digestive disorders, and in the most serious cases, hemolytic uremic syndrome (HUS), a potentially serious kidney complication particularly feared in young children.
Contamination is most often associated with undercooked beef, raw milk, and contaminated plant products through contact with animal feces (via irrigation water or soil). In production, controlling STEC risk relies as much on controlling raw materials as on validating the effectiveness of hygiene and cleaning protocols on production lines.
