What is Campylobacter?
Campylobacter is a bacterium whose main reservoir is the digestive tract of poultry. It is today the leading bacterial cause of foodborne gastroenteritis recorded in Europe, ahead of Salmonella.
Unlike Listeria monocytogenes, Campylobacter is a fragile bacterium: it survives poorly outside its host, and does not resist desiccation, prolonged cold, or cooking well. The risk therefore lies less in environmental persistence than in cross-contamination when handling raw poultry.
Why does it matter in food processing?
The infection generally causes acute digestive disorders (diarrhea, abdominal pain, fever), most often mild but sometimes severe. A rare but serious complication, Guillain-Barré syndrome (an autoimmune neurological condition), can occur in rare cases following a Campylobacter infection.
Poultry remains the main vector, via undercooked meat or cross-contamination in the kitchen or during production (utensils, surfaces, hands). Raw milk and contaminated water are other possible sources. For a manufacturer in the poultry sector in particular, controlling Campylobacter risk relies as much on hygiene of slaughter/cutting lines as on finished product control.
