Understanding Listeria in food processing

What is Listeria?

Listeria is a bacterial genus widely spread in the environment: soil, water, decomposing plant matter, and by extension in many food processing environments. Of the 20 known species, only one poses a real risk to human health: Listeria monocytogenes.

Its defining trait, and what makes it a feared pathogen in the food industry: unlike most pathogenic bacteria, it can grow at refrigeration temperature. A product stored cold is therefore not automatically protected from proliferation, which makes it particularly difficult to control on short shelf-life fresh products.

Why does it matter in food processing?

The infection caused by Listeria monocytogenes, listeriosis, remains rare in the general population, but is particularly severe in at-risk individuals: pregnant women, newborns, the elderly, and immunocompromised people. The consequences can be serious, up to and including severe complications.

For a manufacturer, the risk isn’t limited to public health: a positive result detected late, or worse, not detected before shipping, exposes the company to a product recall, with the associated consequences: direct cost, brand image, loss of customer trust, and in some cases regulatory traceability and notification obligations.

The products most concerned are ready-to-eat foods (RTE): deli meats, smoked seafood, raw-milk cheeses, prepared foods — anything not cooked before consumption.

Regulatory framework

In Europe, regulation is evolving to strengthen the control of Listeria monocytogenes throughout the product’s shelf life, not just at the time it’s placed on the market. This shift is pushing manufacturers to strengthen their environmental monitoring and document their risk control plans more rigorously.

A biofilm is a community of bacteria that organizes and wraps itself in a protective matrix, forming a kind of film that adheres to a surface. Listeria monocytogenes can embed itself in it, making it significantly more resistant to standard cleaning and disinfection protocols than an isolated bacterium. This explains its ability to persist in a production environment over the long term, sometimes for several months, despite regular hygiene operations.

Biofilms preferentially form in damp, hard-to-reach environments: drains, floor joints, gaps in equipment, cutting or packaging areas. The sectors most concerned are those handling fresh, high-moisture products with frequent wet cleaning cycles: dairy products, meats and deli meats, seafood — especially smoked — and ready-to-eat vegetables.
