What is Salmonella?
Salmonella is a widely spread bacterium, whose main natural reservoir is the digestive tract of animals, particularly poultry. Unlike Listeria monocytogenes, it does not grow at refrigeration temperature: it is a mesophilic bacterium, with optimal growth around 35-37°C. It can nonetheless survive for long periods on dry surfaces and in production environments, making it a persistent cross-contamination risk, even in the absence of conditions favorable to its growth.
Why does it matter in food processing?
Salmonellosis, the infection caused by this bacterium, generally presents as gastrointestinal disorders (diarrhea, fever, abdominal pain). While the infection is often mild in healthy adults, it can be more severe in young children, the elderly, and immunocompromised individuals.
The sectors most exposed are those linked to poultry and eggs, but the bacterium can also contaminate raw meats, unpasteurized dairy products, and certain vegetables via environmental or water-borne contamination. For a manufacturer, the main risk lies in cross-contamination between raw materials and production surfaces, hence the importance of regular environmental monitoring, not just finished product control.

Regulation (EC) No. 2073/2005 governs the microbiological criteria applicable to Salmonella in the European Union, with absence requirements in a number of food categories.
