Campylobacter spp. is the bacterial zoonosis most frequently reported in the European Union, without interruption since 2005. And yet, it is one of the pathogens least integrated into manufacturers’ environmental monitoring plans.

Why is Campylobacter so hard to monitor in production?
Campylobacter is not a pathogen like the others. Its biology makes it particularly complex to detect with conventional methods.
It is a microaerophilic bacterium: it grows neither in open air nor in strict anaerobic conditions. Culturing it requires a controlled atmosphere, specific selective media, and incubation at 41-42°C for a minimum of 48 to 72 hours. In an industrial production context, this turnaround simply doesn’t allow decisions to be made in time.
In addition, Campylobacter can enter a VBNC (Viable But Non-Culturable) state under environmental stress (desiccation, suboptimal temperatures, exposure to disinfectants). In this state, cells survive but no longer grow on culture media, generating false negative results with conventional methods.
